Cheers! \ud83d\ude42<\/em><\/p>\n<p>In this week&#8217;s Winemaker&#8217;s Think Tank we outline the difference between flaws, faults, and how to identify them.<\/p>\n<ul>\n<li><strong>Flaws<\/strong>\n<ul>\n<li>\u00a0Flaws are a mistake made in the winemaking process that leads to a property in the wine that is not characteristic of the varietal<\/li>\n<li>\u00a0Stylistic Choice vs. Flaw<\/li>\n<li>\u00a0Imbalance Flaw\n<ul>\n<li>Acid vs Sugar, Oak Levels, Alcohol Level<\/li>\n<\/ul>\n<\/li>\n<li>Visual Flaws\n<ul>\n<li>Haze, Sediment, Effervescence, TA Crystals, Floaters, Lack of Color Saturation<\/li>\n<\/ul>\n<\/li>\n<li>Aroma\/Bouquet Flaws\n<ul>\n<li>Lack of Aroma, Non-varietal aroma, Over-oaking<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><strong>Faults<\/strong>\n<ul>\n<li>Faults are often a microbial or chemical reaction within the wine in some part of its life that significantly alters a wine, eventually leading to the point of spoilage.<\/li>\n<\/ul>\n<\/li>\n<li><em>Oxidation Faults<\/em>\n<ul>\n<li>Acetaldehyde \u2013 oxidation of Ethyl Alcohol smells like sherry, or old apples, browning\n<ul>\n<li>Causes: headspace, low sulfites, poor corks, bacterial contamination<\/li>\n<\/ul>\n<\/li>\n<li>Acetic Acid \u2013 Vinegar\n<ul>\n<li>Causes: Acetaldehyde, Acetobacter bacteria react with ethanol, Fruit Flie<\/li>\n<\/ul>\n<\/li>\n<li>Ethyl Acetate \u2013 Nail Polish Smell\n<ul>\n<li>Oxidation of Acetaldehyde and Acetic Acid<\/li>\n<li>Causes: headspace and bacterial contamination<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><em>Sulfur Faults<\/em>\n<ul>\n<li>Hydrogen Sulfide \u2013 Rotten Eggs Smell<br \/>\nCauses: lack of yeast nutrients, yeast stress, sulfur sprays, yeast bi-product, high temps<\/li>\n<li>Sulfur Dioxide \u2013 Burnt Match Smell<br \/>\nCauses: over sulfating, wild yeast<\/li>\n<li>Complex Sulfur Faults- Mercaptans, DMS, DES, DMDS, DEDS<br \/>\nCauses: Hydrogen Sulfide reacting with Ethyl Alcohol<\/li>\n<\/ul>\n<\/li>\n<li><em>Microbial Faults<\/em>\n<ul>\n<li>Brettanomyces \u2013 Barnyard, Horse Saddle, Antiseptic Ointment, Band-Aids, Bacon, Clove\n<ul>\n<li>Causes: spoilage yeast cells that are incredibly dangerous and difficult to eliminate. Most often found in contaminated barrels, winery cleanliness, resistant to acid and SO2<\/li>\n<\/ul>\n<\/li>\n<li>Geranium Taint \u2013 Fresh cut geranium leaves\n<ul>\n<li>Causes: Reaction of potassium sorbate with Lactic Acid Bacteria in the presence of Ethyl Alcohol<\/li>\n<\/ul>\n<\/li>\n<li>Refermentation \u2013 Fizzy wine, popped corks\n<ul>\n<li>Causes: Yeast or microbial fermentation of residual sugar<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li><em>Other Faults<\/em>\n<ul>\n<li>Cork Taint \u2013 Wet basement, wet old newspaper, mildew\n<ul>\n<li>Causes: strain of trichloanisole on cork (cork taint); mold that contacts chlorine and wood<\/li>\n<\/ul>\n<\/li>\n<li>Heat Damage \u2013 Cooked fruit smell, brick red color, similar to oxidation\n<ul>\n<li>Causes: leaving wine in a hot car, in the sun, etc.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><em>We hope this information helps with your winemaking.
