Add <a href=\"http:\/\/www.juicegrape.com\/Pectic-Enzyme-12-OZ\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">pectic enzyme<\/span><\/strong><\/a> if you&#8217;re going to (5 drops per gallon of juice). Give it a stir.\n<ol>\n<li><a href=\"http:\/\/blog.juicegrape.com\/index.php\/2019\/09\/adding-pectic-enzyme-to-wine\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #993366;\"><em>Why pectic enzyme?<\/em><\/span><\/a><\/li>\n<\/ol>\n<\/li>\n<li>Allow it to come up to room temperature &#8211; we&#8217;re talking 60 degrees or so.<\/li>\n<li>Choose your fermentation vessel: will you keep it in pails or ferment in a <a href=\"https:\/\/www.juicegrape.com\/Carboy-Glass-6-gal\/\" target=\"_blank\" rel=\"noopener\"><em><span style=\"color: #993366;\">carboy<\/span><\/em><\/a> or <a href=\"https:\/\/www.juicegrape.com\/Demijohn-Plain-Plastic-25ltr\/\" target=\"_blank\" rel=\"noopener\"><em><span style=\"color: #993366;\">demijohn<\/span><\/em><\/a>? Make sure everything is clean and sanitized. *Be sure there is enough room to account for fermentation foaming*<\/li>\n<li>If you are going to add fermentation tannins or additives (like <a href=\"https:\/\/www.juicegrape.com\/Oak-Dust-French-Med-Toast-1lb\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #993366;\"><strong>oak dust<\/strong><\/span><\/a>, <a href=\"http:\/\/www.juicegrape.com\/Booster-Blanc-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">Booster Rouge<\/span><\/strong><\/a>, <a href=\"http:\/\/www.juicegrape.com\/Booster-Blanc-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">Booster Blanc<\/span><\/strong><\/a>) you can add that now. *Note: do not add tannins such as <a href=\"http:\/\/www.juicegrape.com\/Booster-Rouge-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">FT Rouge<\/span><\/strong><\/a> within 8 hours of adding enzyme*<\/li>\n<li>Pitch the <a href=\"https:\/\/www.juicegrape.com\/fermentation-products\/yeast\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #993366;\"><em>yeast<\/em><\/span><\/a> once the temperature has reached at least 60F. Yeast strain choices will vary depending on the juice you choose &#8211; ask a winemaker at Musto Wine Grape for a strain recommendation for the varietal you&#8217;re making.\u00a0Follow the yeast starter directions explicitly. Be very careful of temperatures, never adding yeast if there is more than a 18 degree difference between the yeast starter liquid and the juice.<\/li>\n<li>Carefully monitor the fermentation by checking <a href=\"http:\/\/blog.juicegrape.com\/index.php\/2017\/09\/the-winemakers-think-tank-vol-29-how-do-i-test-for-brix\/\" target=\"_blank\" rel=\"noopener\"><em><span style=\"color: #993366;\">Brix<\/span><\/em><\/a> levels daily. Add yeast nutrients as needed if you choose to do so.<\/li>\n<li>If you are adding <a href=\"http:\/\/www.juicegrape.com\/Malolactic-Bacteria-Culture-VP-4125-hl66-gal\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">malolactic cultures<\/span><\/strong><\/a> to your wine, you may also chose to do this at 1\/3 Brix depletion. If using a malolactic nutrient (<a href=\"http:\/\/www.juicegrape.com\/Opti-Malo-Plus-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">Opti-Malo Plus<\/span><\/strong><\/a>) with the bacterial culture, hydrate the nutrient in a separate container from the bacteria and add to the must directly before the addition of the bacteria. Follow all directions on the bacteria and nutrient packets explicitly.<\/li>\n<li>When the fermentation is complete, rack off the lees and continue aging. Many Chilean wines are aged with oak &#8211; if you choose to do this, you can do so in <a href=\"http:\/\/www.juicegrape.com\/Barrel-American-Oak-15-Gal-used\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #993366;\"><strong>oak barrels<\/strong><\/span><\/a> or with <a href=\"http:\/\/www.juicegrape.com\/oak-alternatives-class\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">oak alternatives<\/span><\/strong><\/a> (such as <a href=\"http:\/\/www.juicegrape.com\/Oak-Chips-American-Medium-Toast-1lb\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">chips<\/span> <\/strong><\/a>or staves).<\/li>\n<\/ol>\n<p>Want to read more about making wine from Fresh Juice?
