CSM aids in adding complexity to the palate and pairs well with malolactic fermentation.<\/p>\n<h3>Why you want to use it:<\/h3>\n<p>It\u2019s the perfect yeast for the <span style=\"color: #993366;\"><strong><a style=\"color: #993366;\" href=\"https:\/\/blog.juicegrape.com\/index.php\/2023\/03\/2023-chilean-winemaking-harvest-update\/\" target=\"_blank\" rel=\"noopener\">Chilean fruit<\/a><\/strong><\/span>. It reduces vegetal aromas, adds complexity, stabilizes color, and helps increase the aromatic profiles of berries and spices.<\/p>\n<h3>Use Tips:<\/h3>\n<p>Fermentation starts quickly with this yeast. Be prepared to see Brix drop 24 hours after inoculation. It can stand up 14% ABV and can handle temperatures from 59\u201390\u00b0F. However, I highly suggest keeping your fermentation temps lower than 75\u00b0F. Once you hit 80\u00b0F you lose aromas and \u201cburn off\u201d flavors. Keeping your wine between 59\u201375\u00b0F during fermentation is a best practice.<\/p>\n<p>You also want to use nutrients when using CSM; nutrients such as <a href=\"https:\/\/www.juicegrape.com\/Fermaid-O-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">Fermaid-O<\/span><\/strong><\/a> and <a href=\"https:\/\/www.juicegrape.com\/Fermaid-K-convenience-pack\/\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #993366;\">Fermaid-K<\/span><\/strong><\/a>. CSM tends to produce H2S (rotten egg smell) if there aren\u2019t enough nutrients during fermentation.<\/p>\n<p>Avoid cold shocking the yeast at inoculation. You\u2019ll want to get the must and the yeast starter within a few degrees of each other before pitching the yeast starter. But without temperatures falling lower than 55\u00b0F. Temps below 55\u00b0F could stall fermentation and\/or kill the yeast.<\/p>\n<h3>Goes best with:<\/h3>\n<p>CSM was cultivated to help ferment Cabernet Sauvignon, Cabernet Franc, Grenache, Merlot, Sangiovese, Petit Verdot.
